 Honey ice cream recipe

I made my first bacth of honey ice cream and it was delicious.

5 egg yolks
1 pint (500ml) milk
1/2 pint (250ml) double/heavy cream
1/2 cup honey
1 teaspoon vanilla essence

Beat together the egg yolks and honey in mixing bowl, set aside.

Heat the milk in a saucepan until it reaches boiling point, then simmer. Whilst it's simmering stir in the egg yolks/honey mixture. Continue to stir until it thickens. Remove from the heat, strain and leave to cool. (I waited until I could hold the bowl in my hands)
Stir in the cream and the vanilla essence and then transfer the whole mixture into an ice cream maker. Freeze according to the manufacturer's instructions.
I have on of those machines that uses the insert that is kept in the freezer, it took 40 minutes for the ice cream to freeze.

I used goat milk and goat cream worked wonderfully.

Kathy, I have never seen a honey ice cream recipe. Did it freeze up pretty solid, of did it remain like soft ice cream? I will have try this. We have gallons of honey from the bee rent from our pastures. I can with it, and always make my homemade bread with it. It gives the bread a wonderful texture, moist and flavorful. The bread isn't crumbly like my homemade bread was before I started using honey.

We have a huge jar of local honey, and this sounds like an excellent way to use some of it!
