Posted - May 06 2012 : 3:23:29 PM If you can sugar-free jelly/jam, can you share any recipes. I had customers at the Farmer's Market who asked for it and I did not have any.
I did however, borrow a book from the library (canning and preserving without sugar). The ingredients are a bit gibberish to me - calcium solution and other ingredients I am not familiar with.
Are there better cookbooks for such recipes? I have the ball canning book, but there are not many recipes that do not contain sugar that are canned.
I would love your advice on this or recipes.

Posted - May 08 2012 : 04:07:29 AM I don't think diabetics can have honey, so I am still looking for more sugar-free recipes. I'm going to do some more research today if we don't have thunderstorms again.

Posted - May 07 2012 : 7:42:25 PM I would love to can with honey instead of sugar. I have a friend who only eats honey as a sweetner and she always just makes freezer jam. Plus, we just got bee's and would love to be able to use the honey for canning. Is it just a different ratio?

Posted - May 07 2012 : 05:55:43 AM Chillover® Strawberry Jam
2 lbs. strawberries, washed, hulled and crushed to yield 4 cups crushed berries 2 cups organic cane sugar 2 packets MaryJane's Chillover® Powder
1. Combine crushed strawberries and sugar in a large pot. Bring to a boil, stirring to dissolve sugar. 2. Sprinkle and stir Chillover Powder into liquid and boil rapidly for 3 minutes, stirring constantly. 3. Remove from heat and can in sterile jars (refer to a canning manual for complete canning instructions).
Chillover® Raspberry Jam Substitute raspberries for strawberries.
Chillover® Blackberry Jam Substitute blackberries for strawberries.

Posted - May 07 2012 : 05:54:05 AM Have you tried MaryJanes's Chillover recipe? You don't have to have sugar to make it gel so no calcium solution etc. Just make your preserves with Splenda or Stevia to sweeten and use Chillover to thicken and can it! :)

Posted - May 06 2012 : 8:00:12 PM I made a batch of sugar free jam last year, strawberry. The color did fade out after a couple of weeks, so it looked a little strange, the taste was ok, but not that good. I used the recipe in the low or no sugar pectin box. I think a recipe that has apples or apple juice added would help sweeten it and make it taste better. I wish I had a recipe to share. Debbie |
