So, any suggestions on what to do with ramps? We found last night that we have a TON of them growing on our property. Just curious if there is a good use for them!

Using a dehydrator is the best and simplest way and the end results are wonderful! Here is a link to the tutorial I offered a while back on doing this: http://countrycents.blogspot.com/2010_05_01_archive.html

If you are unable to find your own ramps or do not have the time for dehydrating your own, I also offer these for sale in the market place section under wild garlic for sale.

How do you dehydrate them? I'd love to do that because they have such a unique flavor you just can't get from the big leeks!

These are delicious!! Don't forget you can dehydrate them for use anytime in or on anything!! Soups, stews, breads, salads, sandwiches and so on. Anything you would like to have a mild onion, garlic flavor to.

Fresh they can also be added to the above and used just as you would any fresh onion. So stirfry, flavor sauces, put in sandwiches and so on.

They make a fabulous soup! I also use them for twice baked potatoes, other dishes too. I wonder what they would be like pickled?

I've never been able to find any myself. I understand they have an oniony taste. I have a book that says they are excellent on the bbq grill. I also have heard they are good sauted with other veges like a stir fry.
