We are celebrating at my house today, so I pulled out the ice cream maker.

Coconut Maple Vanilla Ice Cream
2 cans (roughly 14-oz-ish) full fat coconut milk (not that lite stuff)
1/2 cup maple syrup
2 T vanilla (I used my own homemade)
pinch of salt

Whisk all ingredients together in a mixing bowl until smooth and creamy. Chill in refrigerator until good and cold (like 2 hours - in that neighborhood). Pour contents into ice cream maker, and let it chug away making creamy goodness.

We're still waiting for it to be done, but the "proper consistency sampling" has come back with resounding Mmmmmmmmm's. I based the recipe on an ice cream sample DD and I tasted over the weekend.

This is a great recipe for anyone who is gluten free, as well as dairy and egg free.

It came out really creamy and rich - like eating whipped cream! We all agreed that as good as it was (and boy was it!), it could probably use more vanilla to compensate for the strength of the coconut. Otherwise, all I can say is, enjoy!

OOOOOOO, can't wait to try this one. Dh and I have been Vegan since January( Dh's Cholesteral numbers are down 30 points, haven't checked mine yet) but we have been wanting ice cream. This should fit the bill.
