Hi girls!

Well, as after every Easter, I'm facing (happily and gratefully, mind you) a fair amount of leftover lamb meat and ham. Traditionally, we make "Spanish Lamb," as my mother calls it, with some of the leftovers, and then I make these really great sandwiches with vegetables, hummus and a garlic-cucumber yogurt sauce with some of the cold lamb. My Mom makes ham salad, too, which is a family favorite. But this year, I'm in the mood for something a little different. Do any of you have some great recipes for leftover lamb and ham you'd like to share? If you'd like some of our recipes, I'd be happy to share, too - I'll try to do so later this afternoon!

I've been wanting to make Clean Eating's Lamb Bolognese. I think it's in a newer issue.

For ham we make soup or scalloped potatoes with ham. I'll see if I can find the Clean Eating recipe. I think we've put bits of ham in a breakfast souffle or frittata also.
