Hi gals, I was wondering if any of you have home made shake n' bake mixes you can share. (I hope it's called shake n' bake in the States), but it's that breadcrumb/spice mix that you use to coat pork chops, chicken, etc.

I'm looking for some ideas.

My mom had a cookbook called Make Your Own Groceries by Daphne Metaxas Hartwig that includes a recipe for this. She's also got some other really great mix recipes.

I use stale bread, run it through my food processor to crumble it, then add 1 or 2 tablespoons of dried ranch dressing mix, or italian. Dip in egg and then in coating. Bake or fry.

I made some but I mixed a little bit of flour with cornmeal. Then I just added my favorite spices to it. I dipped my chicken in beaten egg and then in the flour/cornmeal mix. Put it in the oven for awhile and it came out crunchy on the outside and tender and juicy on the inside. Sorry, I didn't measure anything, just put it in until it looked right.

I cannot master those things that I have not tried.
