Jonni,

Sorry the caramels ended up being hard for you. Maybe the altitude or barometric pressure had something to do with it. I've made them a couple of times now with no problems (they were firm but not hard) other than them being time consuming and my aching hand. It really would be better to have 2 people working on them. How did they taste to you? I hope that they at least tasted good.

Hey Sharon, I made these last night--they turned out well, I think. They're a bit "harder" than i thought they'd be, though they do soften up when warmed in the mouth--yes, I had to experiment several times ;)

This is terrible, though--I ended up tossing out a quarter of the pan because my hand was just too darn tired from cutting them with the knife, cutting the wax paper and wrapping them individually. To me, this is a two person job. It became a bit daunting (could be that I was stuck inside all weekend with my very active toddler and cleaned until I could hardly stand up so that, by Sunday night, I was pooped) but when I looked over to see a little less than half a pan left and I'd been at it for an hour, I said, "this is ample to give away as Valentines gifts" and that was that.

I'm way more of a savory girl, Amy Grace--I mean, I'll eat a cookie now and again, but I usually end up tossing the remainder of it after a few bites. It's just never been something I needed. Put a chevre and some rice crackers in front of me, though, and I'll demolish that in a second!

I'm going to make them this weekend (a double batch) for St. Valentines Day gifts. That and some homemade turtles and some chocolate graham crackers. I'm in a "sweet" making mood this weekend--good thing I don't care for them, or I'd be as big as a house!

Let me know if you try them Jonni :) Oh and I used reduced fat sweetened condensed milk and they came out fine (as if that helps with calories :))
