This is a French chocolate cake. (My nephew could not say gateau to save his life- so we now have "ghetto" chocolate cake at our house.) Whatever it is called, it's delicious- rich, dense and very chocolatey. YUM!

1/2 cup sugar- set aside 3 T
10 oz. semi-or bittersweet chocolate ( I use Ghirardelli bittersweet chips)
3/4 cup butter
2 tsp vanilla
5 eggs, separated
1/4 c sifted flour
1/2 tsp cream of tartar

Preheat oven to 325 degrees. Butter a 9 1/2" springform pan and dust with granulated sugar.
In a heavy-bottomed pan, put butter, chocolate and sugar. Cook until chocolate melts andthe sugar dissolves. Remove from heat, cool slightly and add vasnilla. Beat in yolks one at a time. Stir in flour.
In a separate bowl, beat the egg whites until foamy. Add the cream of tartar. Incorporate well and add the 3T sugar. Beat until stiff and glossy.
Fold 1/3 of the egg whites into the chocolate to temper. Fold this into the remaining egg whites. Pour into springform pan, tap to release air bubbles and bake for 45-50 minutes.
The cake will come out of the oven a bit puffy, but as it cools, it deflates and develops a wonderful slightly crunchy top. Dust with powdered sugar.
If you want to gild the lily, add freshly whipped cream to each piece.
Gilding the lily is good!!

Nasty good cake? That might possibly beat my nephew's "ghetto" chocolate cake!! I am making one this afternoon for dessert tomorrow. Mmmmmmmmmmmmm.

Well, my first attempt didn't turn out as lovely as the one you had pictured, but it is sure yummy! Great recipe! Thanks for sharing-- it's half gone already. I don't think it will survive to see tomorrow!

Sounds delicious! I am always looking for recipes with very little flour in them (food intolerance) that I can substitute another ingredient with. This one sounds like a winner! I am firing up my oven as we speak!
