Now that winter is in full swing (minus the snow for most of the country) and we have all put up last summer's bounty, what are you doing with it?

I find that sometimes I'm not sure how to cook things up. Beets are the toughest for me, though I did find a nice recipe that hubby liked too.

We have fruit and veggies abound, so share your recipes that utilize just your larder as the basis plus staples such as meat and flour or rice or better utilize those potatoes from the garden!

We make those canned biscuit donuts when we go camping. yummy.

Wow! The donuts sound good. My mom would make them when we were kids but she used the Pillsbury biscuit dough. We didn't complain because they were then placed in a bag of sugar and we didn't know any different. Yours sound delicious.

Today I made a white bean chicken chili. Dry beans, bottled jalapeno-corn and bottled chicken mix with other pantry items. The onion and celery were the only fresh ingredients and those came through the Coop last week. I happened to have them handy or would have used dehydrated instead.

Then home-ground whole-wheat-bread and rolls... also all pantry.

And whole wheat donuts. No dairy- made with almond milk. The only "fresh" ingredient was a potato which came from the larder anyway.

I was thinking how great it is that even though the snow is flying outside, I can go to my "store" and throw together great meals and snacks and not have to run to the store!

Just ate the last of our applesauce but I have an order of juice apples coming in via our food co-op on Monday...so I will be making applesauce and canning on Tuesday!

I made up a mash for tonight. Layered left over turkey (in the freezer from thanksgiving) on the bottom of a dish. Added some roasted green chili (frozen) and topped it all with seasoned mashed carrot and potatoes from the cold room. Throwing it in the oven just before dinner and instant meal.

I use frozen zucchini with diced potatoes in the morning. Can't tell they are there and you get some veggies.

This past summer was my first experience canning...and I put up some veggies in the freeze as well. The real surprise for me has been zucchini. After talking with a friend who is an excellent baker, I froze several packages of shredded zucchini (one cup per package), mainly for zucchini bread. But I started pulling the packages and trying them in other things---it's great in soups, spaghetti sauce, stews.... I'm not a big fan of squash but slipped in this way, you don't even know you're eating zucchini. I'm already almost out....and am planning lots of canning and freezer projects for the summer!

I've never met a beet with which I cared to commune. Ick. I think it is because my grandmother made me eat my beets when we went to her house and now,as a wild and free adult, I have excercised my right to rebel. But I have been making stew with my canned rump roasts, soups with my dehydrated veggies and spaghetti sauce with my canned tomatoes. I love this time of year because I don't have to go to the grocery very much and just use what has been 'put by'..

I roasted beets this summer, I didn't think they tasted any better then boiled ones. lol I liked them the same. lol haha Maybe I just don't know what I am doing, or really really liked boiled beets. lol

Roasted root veggies. I love roasted beets but if you really don't care for the taste you can mask it somewhat by adding it to other veggies. Beets and parsnips are a great combination. But they are also good with potatoes, onions, carrots. I usually roast them cut up at 425 Deg. for about 50 minutes. Brush on your favorite melted fat and sprinkle with salt, pepper and some rosemary, thyme or tarragon. Yum! You could also add a little bit of honey or maple syrup.

On the beets I have found not very many recipes make them any better. I like them plain with salt and butter. I've tried a few recipes and rarely do I think the recipe improved the taste, as they were just fine to me with salt and butter. The recipes for beets for the most part just seem to take a lot of time and not really add anything, in fact sometimes I think they take away from how good the beets already are.

That being said, I do like pickled beets in salads. I like pickled beets in fresh salad greens, with a goat like cheese-any soft white cheese, like chevron, feta, or even laughing cow. And a italian/greek/vinegary type dressing.

I also had it in potato salad. YUM pickled beets are great in both new potato red type salads-the kind with out mustard, and done with less starchy potatoes like new potatoes or red potatoes, and the traditional kind both. But, they really shine in the "red potato" potato salads.

I have been using my okra from the garden for gumbo's and soups. I can never have too much okra. Also, from the many tomato's we had, I cook down and have tomato sauce for the soups. I had lots of green beans, but used them all. I am anxious for the gardening to begin.
