Posted - Jan 10 2012 : 08:23:22 AM I've been reading over several "how-to" blogs/sites on making vanilla extract. One said to drain out the pods/seeds after 6 months. So, if I want to make this for Christmas presents, should I start now?
I would love tips on making this and any personal experiences with it. I plan to use canning jars.

My van is not running (not since before Christmas) and we need to tear down our biggest barn and rebuild a new one.....and put up horse fencing....and...and.... ![](icons/icon_smile_big.gif)
I thought I could use 1/2 pint canning jars, but time will tell. I'll check out all the site you all mention for buying the beans too.

She's got all the instructions, etc. Also, I ordered my beans on eBay - don't remember the exact company, but a bunch of organic beans cost me a fraction of what I would have paid for extract. My first batch bottle is in my pantry closet, extracting patiently. Good luck!

I just started a gallon of extract a couple of months ago. I ordered my beans from www.olivenation.com. I ordered a half pound (approx. 54 beans) for $27. You can buy smaller quantities also. I got shipping free and I think I found a coupon for $5 off so I only paid $23ish. The beans seem really nice, although I've never boughten vanilla beans before to be able to compare them to any others. I ordered them on a Saturday and had them by Tues or Wed. Also, when I got the order, they sent me a coupon thats good for 30 days.
Just another place to for you to check. Also, if you plan on giving it as gifts and need some bottles, check out the website for specialty Bottles. They seem to have a nice variety!

I get a lot of my oils from there. Thanks for the tip. I didn't even think about checking with them.

Posted - Jan 10 2012 : 3:31:49 PM A friend ordered ours for us and they were organic and not that much. If I think about it, I'll ask her. And the Vodka is not all that much either. I've been making mine for years now. I just add a few beans and more Vodka as I get low.

Let steep for a few months, then use. It gets stronger with age, but does not go bad. Mine is about 3 yrs old & still just fine. I used for Christmas baking & it is so much better than store bought. |

Posted - Jan 10 2012 : 10:19:12 AM I just got back from the grocery store - 2 vanilla beans in a jar cost between $6.29 and $7.29 Unless you know where to get a good grade vanilla bean (as a really good price), I'll be changing this idea to something else for Christmas. I can buy organic, fructose corn syrup free vanilla for under $6.00.
