My mother has a friend who is from India. Her friend passed on this recipe for Chai Tea. I thought I would pass it on to my sisters. It makes a generous quart of concentrate that you can keep in the frig and dilute when you want a spicy cup of chai. Perfect for enjoying on these chilly days of winter, or in the hot days of summer over ice.

The recipe calls for cardomon pods. I find this spice at our local health food store.

Chai Tea

6 cups water
7 tsp. black tea (Mom's friend recommended Assam tea)
7 TB. sugar
A chunk of real ginger, chopped fine
1 tsp. whole cloves
1 stick cinnamon
A few grinds of fresh ground pepper
1 tsp whole cardomon pods.

Bring 6 cups of water to a boil. Add tea, sugar, the real ginger and the spices and simmer for 10 minutes. Remove from heat. Steep for 5 minutes. Strain and keep in a quart jar in your refrigerator. When ready to use, heat and add hot milk or use iced with milk. Enjoy!

Candace, I think raw sugar would be great in chai, and since you have the vanilla beans in there....YUM!
Thanks for sharing that too, I am going to go stick some vanilla bean in my raw sugar!

You're welcome! Terri I'm going to try your recipe also. And I also have thought of using honey instead of sugar. Another thing I have thought of trying is raw sugar. I keep raw sugar in a quart jar with two vanilla beans. I thought that might add a different twist. I think it's a recipe we could have fun playing with!

I like this recipe! I make home made Chai all the time but I am not from India : )
So I am thinking that I need to try this one! I love that you put it in the fridge and then add milk when you warm it up.
Mine is different (from a cookbook)...1 cup milk, 1 cup water, 5 cardamon pods, 5 cloves, 1 cinnamon stick, you bring this too a low boil, then turn off and add the tea leaves or a few tea bags, let steep for 5 minutes and then add sugar.
See how different it is? I am eager to taste the difference your mother's friends chai. Thank you so much for sharing it.

Big chai tea drinker here. Will use this recipe for sure. Bye bye packaged chai tea from a company homemade is allways better.
