One of my friends baked this dessert for Christmas. OMG... it was good. I haven't tried it yet. My baking doesn't always come out! Donna said it's a long process, but worth it. The recipe comes from the local Louisiana Slemco magazine.
Pumpkin Cheesecake with Gingersnap Crust
Gingersnap Crust 1 1/2 cups gingersnap cookies, crushed 3 tbsp. packed brown sugar 6 tbsp. butter, melted
Filling 24 oz. cream cheese, softened 1 cup packed brown sugar 1 1/2 cups canned pumpkin 1/2 cup heavy cream 1/3 cup maple syrup (I use Steen's syrup) 1 tbsp. vanilla extract 1 tsp. ground cinnamon 1/2 tsp. ground allspice 4 eggs
For the Gingersnap Crust, combine the gingersnap crumbs, brown sugar and butter in a bowl and mix well. Press onto the bottom and 2 inches up the side of a greased and floured 9-inch pan.
For the Filling, beat the cream cheese and brown sugar i a mixing bowl until light and fluffy. Stir in the pumpkin. Add the cream, maple or Steen's syrup, vanilla, cinnamon and allspice and mix well. Add the eggs 1 at a time, beating well after each egg is added. To assemble and bake, preheat the oven to 325 degrees. Pour the filling into the prepared crust. Bake for 1 1/2 hours or until the center is set. Cool in the pan for 30 minutes. Chill for 8 to 10 hours before serving. Serves 8.[/size=2][/size=4]

Posted - Jan 18 2012 : 09:01:43 AM I made one of these with the recipe Philadelphia cream cheese published in their holiday magazine adds. It was indeed delish, and a perfect hybridization of a baked cheesecake and a pumpkin pie, bit I think the ingredients in that recipe were simpler.

There is another recipe, "Frozen Pumpkin Mousse Pie" that is really, really good. I'll try to post that one soon. Marly
