I have really wanted to have Cashew Chicken for the New Years Dinner - still snowed in at the farm and so would greatly appreciate a recipe...

I looked on line and not too thrilled with what was there - rather have one someone made so I do not waste ingred's because it will be a while before I can go into town to replace if I mess it up.

Any help would be greatly appreciated. Thanks

Grace, don't know if you are still looking or not, but this is my family's favorite:

Don't let the chipotle fool you - you can sub regular chili powder, and you can always control the amount of spice. We prefer it with almonds over cashews, but either way it's still really REALLY good!

Lots of adaptation in this. Green bell peppers instead of red, snow peas, broccoli, whatever you have! I use ground ginger if I don't have fresh, etc...
