I just started one this morning! I should have started it last week but this will be ready right at Christmas. I love these cakes and could eat a whole one myself at one time. (I usually make several small loaves.) The starter I have is really old. Like about 20 years or so. The original starter that is. It smells SO good. I can hardly wait to eat it now. I used my home canned peaches.

Make sure you keep this at room temperature, and stir everyday.
Just remember...no metal bowls or utensils. Enjoy...they are so
good!

Hi Kris,

You have the exact same recipe I have.

Here's the starter recipe I have;
3/4 c. peaches, drained and cut into chunks
3/4 c. pineapple chunks, drained
6 maraschino cherries
1 1/2 c. sugar
1 1/4 pkgs. dry active yeast

Make sure you don't use metal bowls or utensils.
I use an ice cream bucket loosely covered.
It takes about 2 weeks.

So I just googled how to make the starter and there are several recipes. But then I looked at the recipe for the cake and there are so many different ones, no 2 alike at all. This is the recipe I have used for years.

Vicky, this was started years ago by my friend who recently passed away in May. I keep it in the fridge and it's fine. It's really fermented! I don't know how to make the starter. I have not made the cake in a few years. I know you can google it and there is a recipe for the starter. This is the recipe I got years ago for the cake.

1 1/2 cups starter juice
2 1/2 cups sugar
1 large can sliced peaches with the juice

Put all in a gallon jar and stir once a day for 10 days. Keep a piece of cheesecloth over the top.

Day 10:
1 large can of either chunk or crushed pineapple with the juice
2 1/2 cups sugar
Stir daily for 10 more days

Day 20:
2 8 oz. jars of cherries, drained
Stir daily

Day 30:
Drain off juice and save.
Mix in a very large bowl the following:
3 boxes of vannila pudding mix, 3 boxes of super=moist cake mix, 3 cups chopped nuts, 3 cups of oil, 12 eggs.

You could also add raisins.

Bake at 325. I don't have a time on this paper but I would think it would be according to what size cake pans or loaf pans you use. Sorry. I make several cakes in the little tin loaf pans and bake about 30 minutes. The bigger pans would take longer.

My grandma made those every year for Christmas as none of us like fruitcake. She gave me the recipe before she passed away. I usually make them every year, but totally missed the cutoff date this year. But I had gone shopping this morning to get everything and will make them for New Year's. And then there are the extra starters to give as gifts. I make the little loafs so I get more gifts out of the batch. These are fantastic little cakes. You have an original starter? I have to make a new starter every year. How do you keep your starter during the year?

Mine smells like alcohol right now. You start with the starter and add a large can of peaches and 2 1/2 cups sugar and 1 1/2 cups of the starter. I use a gallon jug and cover it with cheesecloth. Stir every day for 10 days then add more sugar and pineapple. 10 days later add cherries. Then 10 days later you make the cakes. Does that sound like yours? This is so good.

Kris what is a 30 day cake? My Mom used to make a fruit cake on Labor Day and then "marinate" it weekly with Sherry. By the time she pulled out her Christmas goodies it was nice and ripe! Is your 30 day cake similar?
