Since my sweetie is diabetic and I'm struggling to lose weight, I've started looking into lower carb ways to bake. Almond flour seems the way to go. Yesterday, I baked a delicious pumpkin pie with sugar replacement in an almond crust. The pie turned out so yummy that I'm having trouble not rushing to the fridge and snacking on it

Almond flour is rather spendy compared to wheat flour, but I love baking so much and Drew loves eating baked goods so much that it's worth it. Its kind of dense, about like corn meal, but has a very mild flavor, it's good for those who are gluten intolerant, need low carbs and for those who just like to try new things

The basic recipe for a 9 inch single crust is:Preheat Oven to 350. In a bowl add 2 generous cups of almond flour, four tabs of melted butter, a pinch of salt and 2 tabs of your fave sweetener...Mix it all together, press into pie pan and bake for 10 minutes.

Trader Joe's has a nice variety we use to thicken home -made soups.

Often wondered how it stacks up against flours for making breads, but I'm threatened enough by rising yeast, so the crust recipe will be wonderful enough for now!

Thank you, Annika. I got it this time and saved it. That cereal looks good. Wonder if it can be made with buckwheat flour instead of whole wheat?

@ MaryJane, I wanted to make my own, but don't own a food processor at the moment. (I do have it at the top of my Christmas wish list with a star beside it tho' ) The co-op has really nice almonds and it would just please the heck out of me to be able to make my own flour! Thank you for the link, I'm off to read it now!

If you have a food processor, you should try making your own almond flour. It's the same thing exactly only fresher. Seems like alot of the almond flour for sale has turned a tad rancid because of how much oil is in almonds. (Always taste test flour first to make sure it isn't at all bitter--the tell-tale sign of rancidity that you might not detect once you add other ingredients and bake with it. My sister has baked with almond flour for many years because it's the only flour her autistic son can eat and I love baking with it also so we always make our own.

I have been LOOKING for a pie crust recipe like this! I am trying to cut down on my carb intake, too, but want to cook foods that will help KEEP weight on Josh! (we're like Jack Spratt and his wife....)
