I love Sunday--my husband is at work all day, and I spend almost all day in the kitchen (Violet, my toddler allowing...)

Yesterday, I made us cinnamon vanilla french toast and bacon for Violet and I for breakfast, cleaned up around the house and then back into the kitchen. Had to use up a sugar pumpkin, so I roasted that, and put the flesh in the processor for the pumpkin pie for Thanksgiving (later, put into a freezer bag and frozen); made curried roasted pumpkin seeds for the wee girl (she's eaten almost all of them!); while the pumkin seeds were roasting, I made a delicious vegetarian Autumn Minestrone soup which used up my delicata squash, some potatoes, carrots and herbs. From the peelings and leftover bits, I simmered vege stock on the next burner and now have 6 cups of veggie stock in the freezer. The soup was WONDERFUL for dinner, what with the wind blowing wildly outside, along with a melt of wild clover honey ham and Havarti cheese.

Even with all that cooking, I still managed only a sink full of dishes, and was able to sit down by 8:30! I need to have at least one day like that for a weekend, otherwise I feel like I've wasted my freetime.

I love it!!! I often spend nasty weather Sundays in the kitchen. My hubby will say, "Relax, sit down", but to me cooking is relaxing. Some Sundays I make enough dinner for Sunday and Monday and a pasta sauce for the freezer for later in the week.

Gotta love a great day in the kitchen!
