Posted - Nov 16 2011 : 1:24:56 PM I use Pamela's Baking Mix (recipe is on the package) or I just buy Betty Crocker GF. We have been GF in our house for a little over a year, and even though I used to bake everything from scratch, now I swear by mixes. I have spent (and wasted) more money on "unusual" ingredients only to have recipes fail because of weather, or because it was the second Tuesday of the month, or whatever reason the recipe decides to fail, or to have my family make all kinds of ugly faces and spit them out. Mixes, for me at least, are the safest bet.
In fact, I made a chocolate chip variation with my friend Betty today. If you'd like to check it out, I just posted it on my blog.

Posted - Nov 14 2011 : 2:32:46 PM I sub coconut flour and almond flour in my chocolate chip cookies. Here is a wonderful recipe:
Chocolate Chip Cookies
2 ½ cups blanched almond flour ¼ teaspoon celtic sea salt ¼ teaspoon baking soda 10 tablespoons butter, melted 1 tablespoon vanilla extract ½ cup agave nectar 1 cup dark chocolate chips
Combine dry ingredients in a large bowl Stir together wet ingredients in a smaller bowl Mix wet ingredients into dry Form 1-inch balls and press onto a parchment paper lined baking sheet Bake at 350° for 7-10 minutes Cool and serve Makes 24 cookies

Posted - Nov 14 2011 : 09:15:13 AM For cookies I just substitute buckwheat and rice flour for the flour in the recipe, about half and half. This works pretty well for most recipes.

Posted - Nov 13 2011 : 2:39:55 PM Hello Jessi Lynn, If you have a favorite chocolate chip recipe you can use that and just sub in a Gluten-Free ingredients such as all purpose flour Domanta Living, Namaste, King Arthur, Bob's Red Mill has flour, baking soda and powders. Enjoy Life has good GF chocolate chips. I like to use the Tollhouse or a cowboy cookie recipe.
