I am going to try making my grandma's noodle recipe. I haven't tried to make them since she passed away many years ago. My question is, do I want to let my noodle dough dry & then cut my noodles or cut the noodles first then dry. Also, about how long is a good drying time...I plan on putting them in the freezer for later. My son loves pheasant & noodles, so thought I would make some noodles up & have them ready since it is almost time for him & daddy to start the hunt.

Beth, do you mind sharing your grandmother's recipe and I can do the same? It's fun to try new recipes. On my great-grandmother's noodles, I have found that I can put them on a cookie sheet and just leave them out to dry and then store them in a ziploc bag. I've been pleased at how they cook up. I also freeze them and then cook them.

Mary Beth, thank you! I made a few this weekend, but I am going to do some more this week. I will try out your recipe for sure. I have decided to make several batches & decide which ones we like best. Very helpful.

Beth, I make noodles that were my great grandmother's recipe and I bet they are similar. If you will go to my blog at http://www.oklahomapastrycloth.com/blog/?page_id=856 I have step-by-step pictures about how to roll them, dry them a little, cut them and cook them. I am hoping it might be helpful to you.

thanks...I did use a pizza cutter & that is definatley the way to go! I don't know how grandma did it...I remember watching her cut them with a knife & she made skinny noodles all the time. She had a lot more patience than me, that's for sure!

I hang mine on pvc pipe suspended from the ceiling on clothes hanger shaped into hooks. The pipe is wrapped in waxed paper. It takes a day or two. Then I bag and freeze them since mine has egg and cream in them. I have heard you can dry can them in the oven, but I feel safer makin them fresh or freezin them, personally.

By the way, a rolling pizza cutter or a big commercial style pizza cutter is my favorite cutting tool!

Dried noodles freeze very well for a quick supper of chicken and noodle soup. I leave mine on the kitchen table and occasionally lift and turn them in flour until they are dry.Usually at least a day in the dry plains here in Colorado

Hi Beth, it's me again.

I forgot to tell you what I do for a drying time. It depends on the temp. and moisture in your house. It usually takes about 2 days on cake racks in my house. If I have a fire going it could take a little less.

Hi Beth,

Cut your noodles while they are still wet, they will break if you try to cut them after they dry. Also let them dry completely then store or cook them.
