I just made banana bread with a few of my many overripe bananas. Now what to do with the rest of them? I'm looking for a banana snack cake recipe. And has anyone frozen the ripe bananas to use later for baking? I assume I would then thaw out the banana and mash?

Don't go to Costco for bananas if you only have two people in the house, by the way. That's what's put me in this banana pickle!

All you Utah gals!! Remember NPS??? From another post....well, when I was there, a couple weeks ago they had big 20lb boxes of over ripe bananas....$2 for the whole box.
I hope they have them next time I go! I will buy some and make some banana jam...YUM!!

I freeze bananas all the time! I use them for smoothies, baking, and sometimes I just eat one...like a popsicle, only good for me..

OH, try this too...blend up the bananas with some frozen berries, which ever you have and freeze it in yogurt containers...it is like ice cream, but all fruit. So good for my kiddos...we try to stay away from too much sugar around here.

you can also take a frozen banana before freezing put a popscicle stick in it and dip in chocolate then freeze that is good too. Same for strawberries eat while frozen sort of like a creamcicle but not quite.
forgot to writ eyou cut the banana in half across the middle. Put stick in spot that you cut.not the length of the babana but the width.

Yum - that banana jam recipe looks wonderful. I am going to try it.

I did not know you could freeze bananas! I like them a lot, DH not so much so I tend not to buy more than I can eat in a few days. Glad to know I can stock up; a frozen banana sounds like a good quick breakfast, too.

ok, here's another blurb from the northern girl who now lives and cooks like she is from the South. BANANA PUDDIN'

This recipe is so easy and really tasty and really, even if it's all just mushed in together, it still tasts great!

Please keep in mind, I tend to cook in quantity, 'cause stuff this good won't last for long!

1 box Nilla wafers
4-5 bananas
2 boxes banana pudding 1 box vanilla pudding follow box directions and blend all together
1 tub coolwhip

this will be layered so start w/ the cookies, then pudding, then bananas then coolwhip so you'll want to end up w/ a pretty layer of coolwhip mine never looks like the pictures, so as long as your crews eat it should be fine. I'll sometimes drizzle chocolate syrup inbetween layers too

there is a cooked nanner puddin' recipe out there too, but i tend to stick w/ quicker and easy

Banana Jam (makes 10 1/2 pint jars)

12 cups sliced bananas (about 20 med.)
6 cups sugar
1 and 1/2 cups orange juice
3 strips orange peel
6 strips lemon peel
2 sticks cinnamon
6 cloves (whole)
In a large kettle, combine the bananas with sugar, OJ, peels and spices. Stir over med heat until sugar dissolves. Boil rapidly 10 min. reduce heat and simmer, stirring constantly until thickened..about 15 to 20 min. When the jam is quick remove from heat and ladle immediatly into hot sterilized jars. Fill to 1/4" from the top. Water bath process for 15 min.
(take the cinnamon sticks out as you get to them of course..and the cloves if you can catch them.

on the ketchup post there was talk of banana ketchup we all kinda decided it sounded gross. But who knows none of us have made it maybe if you are real brave you could try that. YUCK!!! ;o)

Thanks, Barbara! Looks yummy -- will make this afternoon. Thanks to all the advice re: freezing bananas. We'll be banana'd to the brim after the bread and the cake this week, so I'm glad I can save some for later.

Here's a super banana cake recipe. One of my favs. You can use any buttercream frosting if you don't like the one here. Barbara

Banana Cake

Ingredients
2½ cups all-purpose flour
1½ cups sugar
1½ t baking powder
1 t baking soda
1 t salt
½ cup shortening
1 cup mashed ripe banana
2/3 cup buttermilk or sour milk
2 eggs
1 t vanilla


Method
Preheat oven to 350. Grease and lightly flour two 9-inch round pans. In mixer bowl, combine dry ingredients. Add shortening and banana; beat on low speed until combined. Add buttermilk, eggs and vanilla; beat two minutes on med. speed. Turn batter into prepared pans. Bake for 30 minutes or until done to the touch. Cool 10 minutes on wire racks and remove from pans. Cool completely. Frost with Banana Butter Frosting.
Banana Butter Frosting:
2 c. powdered sugar
2 T. softened butter
1/4 c. mashed banana (1 small)
1/2 t. vanilla
Stir together sugar, banana, butter and vanilla. If necessary, add more powdered sugar and beat to spreading consistency.

When I was little my mom and grandmother, both of whom had large chest freezers, would buy bananas by the large box from the farmers markets and freeze them. They always peeled them though. And my mother would dip them in a lemonaid type mixture so they would not brown, the bananas would freeze white and pretty! They would use them to make all kinds of tasty treats during the year bread, muffins, cookies, frozen fruit whips, and so on, but honestly I loved them frozen!! I used to eat frozen bananas just right out of the freezer every chance I got!! Those and frozen seedless grapes are some of my very favorite frozen fruit..oh!! And boysenberries too!

So sorry Jayne that they have gone so expensive ...I hope they will have a good crop next time around!!

Oh, I wish we could afford bananas!! There was a cyclone in the banana producing areas of Australia a month or so ago and bananas are now $13.00 a kg (about $10.00 US).
I also freeze them and use in smoothies, yoghurt, baking, etc.

I freeze mine all the time! I agree with leaving the skins on. Also good with NOT overripe bananas - put onto a craft or popsicle stick dip in melted chocolate and nuts(if you like) them freeze them. Makes an AWESOME snack on a hot day. Bought these from a roadside vendor in Hawaii a few years ago! SO GOOD!

PS you do have to peel the bananas for the chocolate thing!

be sure to freeze them with the skins still on..they look yucky that way..all black and all...but don't get freezer burned at all. We use them in smoothies..no ice required!! and
I also make banana jam sometimes when I have extras (not frozen) if you want the recipe I will post it. It is different and good.

I freeze mine two. If you freeze them it is a good idea to mark the ziplock bag with the number on bananas init incase you forget or have differnt receipts that take differnt amounts.

Frozen bananas have saved me a number of times when I found out I was going to have surprise visitors. Don't worry about what they look like.....my banana cake is sensational using them! But, I only freeze what the recipe calls for that way I don't waste any of them.

I always freeze over-ripe bananas for baking later and they bake just fine. Seems in this warm weather they sure don't keep for very long.
