I was gifted with some pears and finally found a recipe that I was searching for!

Pear Honey

Delicious as a topping for ice cream, cakes, eat on toast like jam or jelly, etc.

Difficulty: Easy

1 qt. pears
1 (20 oz.) can crushed pineapple
6 c. sugar
1 T. lemon juice
1/3 c. water
1 (14 oz.) bag shredded coconut (optional)
Directions

Peel pears and remove seeds. Chop pears in a food processor until very fine. Mix with lemon juice and 1/3 c. water. Cook in heavy saucepan until pears are very tender. Add coconut if desired, pineapple and sugar. Stir often, will stick easily. Cook until pear honey is thick. Pour into hot, sterilized jars. Adjust lids and bands. Process in hot water bath for 10 minutes.

Thanks for this recipe, and thanks for sending me the pear honey in my whimsy jar/box! I eat it every morning...and now that I know how to make it I can replenish the supply when its gone!

Teresa,

I couldn't even tell you what variety I used. They were from a neighbor's tree and were greenish-yellow. I don't see why you couldn't use other varieties :)

Does it matter which pears are used? I have never preserved pears before..
