I have some recipes in an Amish cookbook that call for Clear-Jel. I have never seen this in the store before. I am working on my apple pie recipes, having just gotten a RED ribbon at the fair.
According to OChef at http://www.ochef.com/802.htm it is a commercial product and the smallest quantity available is 8 pounds! 
Does anyone have a source for smaller packages of this product? Have you ever used it? Is it the stuff that makes that pink goo for strawberry pie?

Apparently clear gel is corn starch that has already been cooked so it will set up faster.
Oh, and I would bet it is the stuff that makes the goo for strawberry pie since it doesn't require cooking.

Brenda- I found these links. You do not have to get 8 lbs. here either. The Walton feed site has cold and hot Clear Jel. I'm not sure what the difference is. Apparently this is used in place of cornstarch.

Thanks for taking the time to check this out. Asking a school to order for me is a good suggestion.
Actually I was talking to a lady at the pie auction at our local county fair yesterday and she suggested the Amish bulk food store about 8 miles down the road from me. Evidently they buy large packages of things and re-package them?
I will have to check it out. I'll let you know what I find.

Brenda, I don't know if this will help or not, but a friend of mine who does lots of cooking said she has never used this (I called her after reading your post), but she did suggest you contact local schools. She said when she moved to the area she visited a local elementary school (after lunch had been served) and asked the head cook if she could order things through them. They were happy to do it.
She said if that fails, maybe a restaurant would help you out. Sorry I don't have a specific source -- best wishes in finding this.
