Someone gave my friend several jars of last year's canned corn. There is very little liquid in the jars and the top inch or so is empty. The corn in the lower part of the jar looks good but the top layer down a couple of layers is discolored, sort of a greyish color.

Is this safe?

Part of the problem with corn is that some don't can well. We have Olathe sweet corn here and it is wonderful fresh or frozen, but always turns color on top if you try to can it. Knowing I canned it still doesn't make me eat it though. Better to be safe.

Whole heartedly agree with the don't eat it! My daughter called this morning from her office and had this question: "Mom? We have some boiled eggs that were made yesterday morning but that have sat out on the table since then. Is it ok to eat them?" I just double-checked that they had not been in the frig but had been sitting out for two days. That was correct. Don't eat 'em~!!!! Ya think?? Kids!! :-)

If you don't think it looks right don't eat it. Its not worth getting sick over a couple of jars of corn. If I don't think it looks right or does not smell right I do not eat it. I ate some bad fish one time and it took me like 6 months to get over it. I am very careful now. I have never been so sick in my entire life!
