I've been a little busy!! I decided to try dehydrating sweet potatoes because I love the things and this Fall time is when they go on sale. When I buy them, they don't last very long in the potato bin and so I decided to see what would happen if I dried them. Oh my. Love them!! I made candied sweet potatoes the other day with some of the dried potatoes and they were great. I bet if you cut the into cubes instead of slices, you could use them for a sweet potato pie. Anyway, I'm pleased!! If you'd like to see the pictures, I put them up at the blog this morning.

Portia, as I told Margo, if you are wanting to do that, you need to boil them longer until they are pretty much done. Good luck and let me know how they turn out!

Oh, those sweet potatoes are beautiful! I like to dehydrate foods, too, but never thought of sweet potatoes. Instead of sugar and cinnamon, you could put a little sea salt on them and they might taste like the veggie chips you buy at Trader Joe's and other shops. I think I will try that myself! I might even buy a bushel and do them all kinds of ways!

Margo, I hadn't thought of that either. I think that I would boil the slices until the are almost tender before dropping them into the ice water if you are going to use them for snacks. They are only blanched the way that I did it. I think that would really be good to boil them to almost done and then spinkle the with cinnamon and maybe xylitol or even brown sugar before drying. Great idea!!

i'm tickled that you posted this! one of my fave veggies-and i'll bet those dried taters would be great snackin right outta the jar!(maybe a lil cinnamon on them while drying?)tomorrow's grocery list is topped with taters!

Oh!! Great idea. We have a little long-haired dachshund that can't have any people food and only certain veggie treats. She could have these!! Thanks for the suggestion. :-)
