What is your favorite Dip Recipe??

Mine is Taco Dip

INGREDIENTS:
3 (16 ounce) cans vegetarian refried
beans
1 (16 ounce) container sour cream
1 (1.25 ounce) package taco seasoning
mix
1/2 cup salsa
1/2 head lettuce - rinsed, dried,
and chopped
2 tomatoes, chopped
1 onion, chopped
1 Bell pepper, chopped
3/4 cup chopped black olives (optional)
8 ounces shredded Cheddar cheese

DIRECTIONS:
1. Place the beans in the bottom of one 9x13 inch clear glass dish.
2. In a medium bowl combine the sour cream with the taco seasoning. Spread mixture over the beans. Spread the salsa over the top of the sour cream. Top the sour cream with a layer of lettuce, tomatoes, onions and olives. Sprinkle cheese over the top and serve

I have quite a few favorites, but when I serve this one to guests, everyone loves it.
Roasted Garlic Bean Dip

10 cloves of garlic, roasted (see below)
1/2 t. salt
19 oz can white beans
1 T. cider vinegar
1/4 t. ground cumin
1/3 cup mayonnaise
2 T. chopped fresh parsley

In food processor combine roasted garlic cloves, beans, vinegar, cumin and salt. Process 1 minute, scraping bowl once. Add mayo and parsley. Pulse until blended. Serve with toasted pita crisps, crackers or raw vegetables.
To roast garlic: Coat unpeeled garlic cloves with oil. Bake in a 375 degree oven for 20 minutes. Cool slightly and peel.
Parmesan pita crisps: Cut pita bread into eight pieces. Brush with melted butter and sprinkle with parmesan cheese. Bake at 375 degrees for 8-10 minutes.
