We have several persimmon trees...wild persimmons I guess you'd call them. There is fruition the ground everywhere! What do I do with them? They are small....about golf-ball sized, some a little bigger. We have tons and I hate to see them waste. A lady I went to church with years ago had a recipe for persimmon bread that was almost like that orange-slice cake...candied, almost. I never got the recipe from her, though. Any ideas? A couple of years ago, I washed them, and mealed them, for lack of a better word, to make a paste to use in breads, etc. But the product I made, be it cookies or bread upset my tummy, so I wondered if I needed to process them somehow before freezing. I don't have recipes or instructions anymore...and I'm on long holiday weekend with a husband at home and a clean house. Help me find a project quick before I get recruited to do who-knows-what!

Holly, I was just looking at the persimmon trees on our property Sat. Was wondering what I could do with them too, also hate to see them go to waste. I used to eat them when I was a kid and loved them so I looked up a recipe for jam. I don't know how many I will get since DH said the deer around here love them too. I did see that you can pick them green and let them ripen...that way be the only way I get enough to make jam. Mine aren't anywhere ripe yet, but here is the recipe

Persimmon Jam
This jam is wonderful on any bread, but especially delicious on a fresh, home-baked, hearty bread. Makes 6 jars of jam.

3 cups prepared fruit, about 5-6 average-size persimmons
1 cup water
1 package pectin
1/2 cup lemon juice
6 cups sugar
Directions:
Prepare fruit by cutting into small pieces.
Measure fruit and water into large kettle. Stir in pectin and lemon juice. Bring to a full rolling boil and boil for 30 seconds.
Add sugar and again bring to a rolling boil for exactly 4 minutes, by the clock. Stir constantly. Remove from heat and pour into sterilized containers.

Oh my gosh, I LOVE Persimmons!

I wonder if they weren't totally ripe if they upset your tummy. I would love to try making Persimmon Jam.

You can always mash them and remove the seeds, then freeze them in 2 cup portions, then sell them. I know a lot of recipes for persimmons and dearly love them, but I know they are on the allergy list for alot of people. They are just one of those things that some people can't eat.

You can make pudding, bread, cookies, cake, and custard with them. I personally love cookies and butter for my biscuits with persimmon. I know of people makin a glaze for chicken and ham from them as well, but have never tried it.

Around here the pulp goes for $3 per 2 cup portion. There are several people who sell it on craigslist!
