Hi ladies -

I bought a bag of corn on the cob, and now can't cook or can it because the power is still out from the hurricane. I have a back-up generator that runs my refrigerator and freezer but not my stove because it is 220v. Is there some way I can freeze corn without cooking or blanching it first so it won't all go to waste?

Thanks!
Luanne

Good luck Luanne, I swear it will work...was a shock to me when DH did it but I think it was even taster when cooked after freezing this way

Thanks! I think I'll just put it in the freezer in the husks and see what happens. Latest update is that we might get power back on Friday or Saturday.

Here is our family recipe
cut the corn off the cob
15 cups corn
5 cups water
3/4 cup sugar
1/4 cup canning salt
mix it up and put in freezer bags
I really like this method

We pretty much do the same thing Penny does but I pull the husks back and remove the silk then freeze in ziploc bags. We just place directly on the grill from the freezer.

My DH just takes it and puts it in the freezer with the husks on...I thought that was so strange the first time he did it....but the first time he took it out and put it on the grill...it was amazing. I take it out and let it thaw then shuck it and boil it...it doesn't get freezer burnt or anything..he doesn't even put it in bags...I know sounds weird but it works.

I have had success with cutting off the cob and putting it in freezer bags. No blanching no cooking till you eat it.
