One of the farm girls posted this recipe the year before last. It's really very good and a great way to use up zucchinis :)

Elinor,

Glad you and your daughter liked it :)

Kristina,

I just canned it this morning. I couldn't really taste the pineapple (I used a 20 ounce can crushed and drained) but I did add about 5 Jalapenos and it came out really good. Last time I made it (2 years ago) my husband didn't like it but this year he does. :)

I had most of the ingredients for this recipe and then got the rest last night. I made 1/2 the recipe and my daughter and I really like it.I'm thinking about making more, we will see . I used crookneck squash instead of zucchini and I did not peal them but did remove the seed.
Thanks!

Your welcome Kristina! I really like it and in fact I am going to try making some this week and maybe adding some pineapple and jalapenos too.

Sharon, thank you for sharing this recipe. Last year we had a ton of zucchini, and this year we have almost none. I'm saving the recipe for next season.
