I'd like to do this. (I better find the book to my dehydrator)

How do you store them after they've dried? Can i put them in olive oil in a jar (refridgerated of course for short term)

Once dry I just put them in a canning jar in the lower cupboard. I use olive oil on fresh cherry tomatoes for storage, but no need if you've dried them. As with anything you should keep an eye on them to make sure a moist one didn't get in the batch and start to spoil them all.

I dry at a lower temp then called for. It keeps the color and texture better I found, one reason to ahave a dehydrator with a temp control.
