Does anyone can apple pie filling? I have some yellow transparent apples we picked last weekend and I am going to have to do something with them TONIGHT or else throw them away, as they are starting to split in this awful heat. I have not had luck freezing apples, especially yellow transparent, and the only other options I can think of are applesauce (a little tart with the yellow transparents) and apple butter (I've never done that before)

I love yellow transparents for pies but haven't canned them before.

I'm sure you know you can freeze applesauce. I keep it pretty chunky and then can use it for a variety of things when I thaw.

I have reduced it before Brenda..and it still works great. I have used this recipe forever..it is pretty fail proof.

Oh bless you, Jenny. I have been peeling apples for the last two hours and was hoping someone would come through with a tried and true recipe.

I am going to be throwing away a lot of peelings and split and rotten apples. I started with one bushel last week, I was down to 1/2 bushel today - I keep throwing away the ones that have turned brown. I have peeled 3/4 of the half bushel basket and I have the largest Pyrex bowl full now, I doubt it will be 16 cups (I will have to measure) but I am pretty good at math I can reduce the recipe.

I recently got Mary Jane's egg issue and there is an apple pie filling recipe in there as well. A friend of mine said she has a bunch of apples right now, so I'll be makin' some up myself. That and some applesauce!!

Here it is I found it on a thread from I think last year in August... It is from "Putting Food By" and is one of my favorite recipes.

Apple Pie filling
4 1/2 cups sugar
1 cup minute tapioca
3 Tbsp lemon juice
1 tsp cinnamon
1 tsp salt (optional)
1/4 tsp nutmeg
a dash of allspice
10 cups water
16 cups of sliced apples
stir together all the dry stuff first in a really big stock pot and then add water...and cook on med high heat. stir and cook until thickened and bubbly then cook an additional 2 minutes. Add lemon juices, and then add the peaches to the sauce. Stir constantly and bring mixure up to a rolling boil and cook one minute. Promptly ladle into quart jars leaving 1/2 inch headroom. Process in boiling water bath for 25 minutes.
a quart is just enough for a pie. Works for peaches too
this makes 7 quarts usually.

YES!! I have a wonderful Apple Pie filling recipe...I am pretty sure I have posted it before here..probably last year at this time. I can apple and peach pie fillings (and cherry this year too) every year.
My youngest little apple tree is a yellow transparent..I planted it summer before last and the deer almost killed it the first winter..it really has rallied this year..we will get about 10 apples..I sure look forward to next year!! My other apple trees are big and old and do produce alot of apples but I love the yellow transparents for canning alot!
I will search to see if the pie filling recipe is here..if not I will post it later tonight...okay???
