I've gotten really good at cutting recipes in half. My husband is not a big fan of leftovers, so I try to make just enough dinner for two. The one thing I'm having issues with is with alfredo sauce.

Any one have some good recipes to make a small amount? I'm not looking for anything fancy, just a very plain recipe. I usually don't mind making a bunch and freezing it, but we have NO freezer space at all. I'm hoping to fix that though!

Thanks in advance ladies!

Micah, I found this recipe the other day, it is suppose to be the copycat recipe for Olive Garden's alfredo sauce.

1 stick butter
2 cloves minced garlic
2 cups heavy cream
1/8 t. pepper and a pinch of salt

1/2 cup parmesian cheese

Melt butter, over medium heat, add garlic, cream, salt and pepper.
Stir with whisk to prevent scorching.
Add cheese and stir until melted and all mixed.

Calls for 12oz fettucine

I have to say I have not tried this yet, but it is really close to the one I usually use and it is great. Hopes this works out for you, let me know.
