I've tried freezing green beans in the past, but they always seem to be mushy and kind of tasteless. Does anyone have any tips for freezing them that might help me?

I grow Jade bush beans and just like Amy I don't put them in until AFTER the full rolling boil then I blanch for 2 minutes, put in ice water (super important to stop the cooking process which can make them mushy) and then I package and freeze! Another thing is you don't want to put too many bags in your freezer because you want them to freeze normal time. It just depends on the size of your freezer :) I just found that out this year. I actually prefer frozen green beans to canned green beans (except when I make green bean casserole!) but that is just my opinion :) Best of luck in freezing beans this year!!!

Jennifer, I do the same as Amy, only I blanch the beans in the boiling water for under 2 minutes, throw them in the ice water and then I spread them out over a good bath towel and dry them off. Then I put them on cookie sheets and freeze on the cookie sheets. When they are frozen, I scoop them off the sheets and quickly put them into ziploc bags and put them back in the freezer. Doing this keeps the beans separate and not lumped together in the bags and you can just pour our however many you want to use like with store bought.

We just snap off the ends, blanch them for a few minutes (put them into water AFTER it is already at a rapid boil, and then boil three minutes) then plop them into ice water (to stop them from cooking) Let them cool, bag 'em up (make sure to get the air out of the bag before you close it), stick them in the freezer. This is what we have done in the past with good results! :)
