While going through recipes, I found a handwritten one for Chocolate Zucchini Bread. The problem is it does not list how much zucchini and I am afraid other ingredients are missing. Does anyone have the recipe?

This is a zucchini bread recipe that I have modified from my grandmother's recipe. It's absolutely my favorite back to school breakfast!
I don't bother with pre sifting or combining ingredients separately, I just toss it all in my mixer with the zucchini being last to go in.
You can use white flour or a combination of both whole wheat and white. I use what ever I have on hand.

TRACY'S "BEST EVER" ZUCCHINI BREAD

3 eggs, 1/2 c oil, 1/2 c unsweetened apple sauce, 1 c honey,
3 c whole wheat flour, 1/2 t orange extract, 1 t lemon rind, 1 t salt,
3t cinnamon, 1 t baking soda, 1/4 t baking powder, 1/4 t nutmeg,
1/4 t ground ginger, 1/2 c nuts, 2 c grated zucchini.

Bake 375 degrees
55 min for loaves
25 min for muffins.

CHOCOLATE ZUCCHINI CAKE

Cream together 1/2 c shortening, 1/2 c oil, 1 3/4 c sugar, 2 eggs,1t vanilla
Sift together 2 1/2 c flour, 4 T cocoa, 1/2 t baking powder, 1t baking soda, 1/2t cinnamon, 1/2 t cloves.
Combine the above bowls and mix in 1/2c sour milk 2 c grated zucchini.
Spray a rectangular cake pan and pour in the batter, sprinkle top with 1/4 c choc. chips
Bake 375 degrees for 35 min.

I have a choc zucchini cake and a zucchini bread (non chocolate)
recipe, they both call for 2 cups of shredded zuccini.
I will post both but it will take me a few minutes. stay tuned.

hmm, I don't have that recipe but the one I use (gluten free) calls for 1 cup of shredded Zucchini.
