It's finally going to be cool enough here next week and thought I'd start making strawberry jam. I give my jam away at Christmas time as gifts, but this year I would like to "mix" it up a little so I went on line for the ultimate strawberry jam recipe when I came across Strawberry Tarragon Jam ...sounds pretty interesting-

Anyone out there have an opinion about Strawberry Tarragon Jam?

I'd love a good to hear what you think!

I just used the Blackberry Jam recipe on the Sure-Jel package and added 1 Tablespoon Vanilla Extract to it

Gladly Melody I am also experimenting this year and just made some Blackberry-Vanilla that is awesome!

~*~Strawberry Thyme Jam~*~

4 pints strawberries, stemmed and crushed (5 cups crushed strawberries)
7 cups sugar
1 Tablespoon fresh Thyme, chopped fine (or more to taste) if using dried use 1 teaspoon
1 box powdered pectin (1 ¾ ounce)
½ teaspoon butter or margarine (optional)


Place strawberries in a 6-8 quart saucepan (I use a stockpot). Add fresh Thyme. Stir one box fruit pectin to the strawberries and mix well. Add teaspoon of butter or margarine to reduce foaming.

Bring mixture to a rolling boil on high heat stirring constantly.

Stir in sugar quickly and return to a full rolling boil for exactly one minute.

Remove from heat and skim off any foam quickly.

Ladle into prepared jars, wipe off any excess jam off of jar rims and threads. Place lids and bands on tightly and process in water bath canner about 10 minutes.

Yield: About 8 cups

Sharon...would you e-mail me your recipe or post it here? Sounds a bit more appetizing than tarragon and I have oodles of thyme growing in my herb beds!

Hmmm, I never thought about using Tarragon. Tarragon to me has almost a licorice flavor to it so I don't know. I'll have to really ponder that one :) I've made Strawberry-Thyme Jam and that's good.
