I found the recipe for Mary Jane's veggie muffins in her Outpost book. They looked beautiful and yummy and easy - just some steamed veggies, egg, and bread crumbs. But when I made them, my batter was not pourable, like the recipe said. It was like stuffing - very gummy and stiff. And they were not a solid color all the way through, like hers were either. Has anyone else made these and found a way to make them more muffin-like and less stuffing-like? They are just gummy and rubbery, especially the day after baking them. Thanks!
