Last year, a friend of mine showed me this nifty gadget she'd had for years called a "Coffee Toddy" You put coarsely ground coffee in and then let it sit overnight, strain and Waa Laa, you have this delicious, low acid coffee concentrate that keeps in the fridge for weeks!
It is kind of pricey, so i put it out of my mind (although I do have a problem resisting any new kitchen appliance : )
Last week I discovered.... (but I can't remember where...i'll be embarrassed if it was in MJF mag) you can make it in a JAR!!
AND, it makes the best "iced coffee" i've ever made.
Here is how:
1/2 pound coarsely ground coffee
5 cups cold water
Large (not a quart jar, don't ask me how i figured that out...) glass jar

place grounds and water in jar, let sit for 12 hours or overnight
strain... if your strainer has big holes, use some cheesecloth to line it
you will have about a quart jar of lovely concentrate that you'll keep in the fridge
every time you want some iced coffee, place and ounce or less of concentrate in a clean jar with a lid, ice, and cold milk.... add the sweetener of your choice... or not... shake and dump into a pretty glass with a straw.... mmmmmm : ) enjoy.

And ladies.... you might want to explain.... to your thrifty man..... DO NOT ADD LEFTOVER COFFEE FROM THE POT TO THIS LOVELY JAR OF CONCENTRATE!!...... It ruins it.... He said..... "but now we have a full jar of coffee now....."

I think you can/should use whatever you like to drink.I grind my beans and use a dark roast but start with any coarse grind you like and go from there.

Thank you for this recipe! Years ago I had to give up regular coffee due to the caffeine but switched to decaf. Then had to give up even that (boo hoo hoo!) because of the acid. I used to love iced coffees in the summer time so I will be trying this tomorrow! Man! I'm giddy at the thought that I might be able to drink coffee again!

What a great idea, I love iced coffee during the summer, but it just doesn't "get it", when you put morning coffee in the fridge! Can you use just plain ole Folgers for this??

Yummy! I will try this, even though my husband and I usually just put our extra coffee from the french press or melita dripper into a jar in the fridge, and it is fine. Less acid will be better.

I've had a coffee toddy for about 16 years. There really is a difference as far as the acid content is. During the summer, we use the concentrate for iced coffee as well as hot coffee. Anyway that you can keep the acid content down is great! I order the thick filters from them & they last a long time. Mmmm think I'll have a cup after dinner.

I have to admit iced coffee is a weakness of mine during the summer. Have not heard of this procedure but will give it a try - thanks for sharing

Julie, I make iced coffee this way too. I put mine in a big bowl with a lid and then pour it through a fine mesh strainer lined with paper towels. Easy and it keeps me happy!

We have a coffee toddy that was given to us as a gift. I don't drink coffee (how can something that smells so good taste so bad???) but my hubby drinks it every morning. He loves the coffee from the toddy and makes it himself once a week. He keeps it in the frig. He says he much prefers it to brewed coffee...something about not having as much acid? Anyway, he swears by cold brewed coffee!:-)
