I just canned 8 qts of fridge pickles, hoping someone would post a recipe for canned pickles. Anyone have a relish recipe? Tried and true?

I did a few different types of relish using my zucchini because we have more than I can freeze. The first was a dill relish, the second a zesty relish that had a touch of horseradish. Both came out great. Both recipes came out of the Ball complete book of home preserving. I have found most of my recipes in this book of late and loved them all. The dill recipe was originally for cukes, but Zucchini works well.

Candy, my hubby had the produce stand guy here a few days ago. He gave the guy a hormel hotdog with the relish and the guy wanted to sell the relish at his stand. Dh told him it wasn't for sale - ha ha ha ha! I told dh I was not selling anything this year (maybe barter, but no sales). I would have shared the recipe with your permission, but he never asked for it. He just wanted to sell it.

I made two batches of this today and we LOVE it! Hot dogs anyone? Thanks so much for sharing, I love the crushed red pepper it really added to the relish :)

Oh and just wanted to add a note:

Ummmmm...............I'm gonna need more canning jars. He he he! I have lots more cucumbers and zucchini coming in, and it's about to pour down rain later this afternoon. I will most likely have a boat load to deal with after that arrives.

I was going to post my Zucchini Relish recipe but Candy's looks better I bet it is so tasty with the crushed red pepper flakes :)

Candy, have you ever tried adding minced garlic?

I use this one with either cucumbers or zucchini. It is spicy and I just LOVE it! I use it in potato salad, chicken salad, egg salad, on hot dogs, just everything! :)

Zucchini Garden Pepper Relish
4 medium zucchini (about 1 1/4 pounds), finely chopped. (Or cucumbers to weigh the same.)
2 medium onions, finely chopped
1/2 sweet red pepper, finely chopped
1/2 sweet green pepper, finely chopped
2 tablespoons pickling salt
1 1/4 cups granulated sugar
3/4 cup cider vinegar
1 teaspoon dry mustard
1 teaspoon celery seeds
1/2 teaspoon hot pepper flakes
1/2 teaspoon turmeric
1 tablespoon water
2 teaspoons cornstarch

Toss together zucchini, onions and red and green peppers in a large non-reactive bowl. Sprinkle with salt and stir well. Let stand for one hour, stirring occasionally. (If using cucumbers, let stand for 4 hours, stirring occasionally.)
Drain vegetables and rinse; drain again, pressing out excess moisture.
Combine drained vegetables, sugar, vinegar, mustard, celery seeds, hot pepper flakes and turmeric in a large stainless steel or enamel saucepan. Bring to a boil over high heat, reduce heat and boil gently, uncovered, for 15 minutes or until vegetables are tender; add water if necessary to prevent sticking.
Blend water and cornstarch; stir into vegetables. Cook for 5 minutes or until liquid clears and thickens, stirring often.
Remove hot jars from canner and ladle relish into jars to within 1/2-inch of rim. Process 10 minutes for half-pint jars and 15 minutes for pint jars. (Adjust processing time for your altitude.)
Makes 4 cups.
