These can be made so many ways, and some of you may already be making them. Aside from the soft tortilla to wrap it all in, items can come directly from your garden.

In a skillet, heat a small amount of oil (olive or what you prefer), and add chopped onion and bell peppers until onions are clear.

Now here, you could chop up kohlrabi also. I loved adding this to many dishes last year (I just don't have any ready this year yet.).

Once those are cooked. You can toss in any vegetables like zucchini, asparagus - whatever you'd like.

When I found that we were low on lunch items, I made our with:

green bell pepper
onion
dried oregano (from the herb garden)
minced one small clove of garlic
....then scrambled 4 farm fresh eggs, cooking all of it until eggs were cooked.

We spread it on a soft, low sodium whole wheat tortilla, and topped ours with Feta cheese. Don't toss the cheese in and heat with the eggs, or you will have juice dripping from your burrito.

Here are ideas to add to them:
-pinto beans
-black beans
-chicken pieces
-sausage
-cooked bacon
-diced potatoes
-diced kohlrabi
-squash, cubed
-tomato
-any bell peppers
-poblano peppers
-cut broccoli pieces
-spinach
-swiss chard
and any spices you like.

These are fun for kids to experiment with too.
