Had a request for this..so thought I'd go ahead and post it here for anyone else that might wish to give it a try.

1 pkg. yellow cake mix
1 can crushed pineapple, drained well
1 jar orange marmalade jelly
1 ctnr. creame cheese flavored icing
1 pkg. sweetened coconut/halved (1 part left as pkged/other part toasted in oven at 325 degrees for about 10 minutes until golden brown)

Prepare cake mix as per pkg instructions. Add the can of crushed pineapple and the 1/2 pkg. of sweetened coconut/untoasted.
Pour into 2 greased/prepared cake rounds.
Bake as specified on pkg or until pick inserted in center comes out clean.
Cool.
To assemble spread the orange marmalade generously on the top of one of the rounds.Stack.
Use the entire jar if you want to.
Then frost with the cream cheese frosting. Sprinkle the toasted coconut on the sides and top of the cake.

* if you want to give the cake a little extra decor on the top and around the sides you can garnish it with very thinly sliced orange slices,cut a slit in the orange slices and slightly twist to create "orange swirls".
Or you can top with fresh strawberries. Or with drained maraschino cherries.

This cake winds up being very moist, so do not use the pudding in the mix cake mixes or you will wind up with one that will fall apart from the moisture.

Refrigerate leftovers.

That sounds so good!!! I will have to wait for a slightly cooler day too...it will be a gelatin dessert for tonight for sure!! I will be using this recipe for sure though..it sounds wonderful!! thanks for posting it!!

This sounds so yummy, and it's only 5 ingredients! I'd love to bake right now, but with no air conditioning it's a little hot to turn on the oven...
