 Vegetarian main dish for family w/new baby?

Hi girls...I'm stumped! My good friends just had a new addition, a baby boy on Monday and they're home and I wanted to bring them something good to eat. The mother is a strict vegetarian, the dad will eat anything, and the other two children, well, they're kids. Also, I'm doing this after work, so it will need to be a "fix it and forget it" sort of thing.

What is a good, please all, vegetarian meal that won't break the bank? I thought about the Pioneer Woman's vege lasagna, but wholly cow is that pricey when you add up all the veggies and cheese!!!

It's still a while from payday and though I want to do something nice, I can't go poor doing it :)

I would make also a breakfast French Toast Dish with some new roasted potatoes because folks need a great breakfast when their world is not sleeping. Then I might make a Lemon PoppySeed Bread with fresh fruit and some great yogurt and a multi greens salad with a fresh raspberry dressing and then for dinner a fresh veggie tomatoe sauce with pasta in fun shapes for the kids. Top it all off with some icecream and fresh cookies.... Boy am I hungry now. I just finished making a huge Flan as a treat for me - spent the day in the heat meding fencelines....

All the suggestions sound so great that I might have to make a few of them for myself... Thanks for the ideas ladies.

I'd try soup and bread!

How about some breakfast casserole or french toast casserole or potato casserole? Breakfast for dinner is always fun! :)

oooh Jen, I LOVE this zucchini quiche that a lady in my TOPS group used to make in NYC. I never could get her to give me the recipe. It didn't have a crust though, had zucchini, cheese (I think a white five cheese italian blend by the flavor and looks!), I think hers had bisquick in it too, probably milk as well, and eggs of course. That's my guesses so far. It was soooooo good though, probably had some garlic in it too. It's also a perfect summer meal cause it's good room/cold temp! Add a salad and you have a awesome meal.

I'd probably go with zucchini cassarole, but I have 20lbs of zuccs sitting on my counter full time at this stage of the garden >_< If you're looking for an exotic idea you've never considered before I recommend going to Allrecipies.com and searching "vegetarian". A search for zucchini is how I've been finding ways to use up my squash.

I've heard lentil soup is really good for nursing mothers and mothers who just gave birth. (read on a blog so not so sure the entire truth of it). But, that is vegetarian and really cheap.

I am thinking anything with beans would be GREAT protein as well. Like beans and rice, etc. Black beans with some tortillas and cheese, for bean burritos.

I personally LOVE corn chowder, as it is good hot or cold (perfect for summer).

Basically it's-
fried potatoes (I like using sweet potatoes for a extra kick of flavor)
creamed corn
black beans
salsa

season to taste.

Awesome, Lisa. That sounds great! I forgot about the spaghetti pie! And I loved your noodles. I plan on going to the market in a bit on my lunch hour and I will pick up everything then.

How about MJ's spaghetti pie? I had this saved from somewher.. Probably here.
"MaryJanes spaghetti pie. She said it makes 2 and that they freeze well. I tried it and it was hands down delicious. Even better after frozen. Each"pie" makes enough to feed 4-6. The recipe is as follows, 12 oz. of spaghetti,1/2 c. parmesan cheese, 2 c. cottage cheese, 3 c. spaghtti sauce, 1 c. mozzarella cheese, 3 T. butter, 2 eggs well beaten. Heat oven to 350. Cook spaghetti and drain. Stir butter into hot spaghetti then parmesan cheese and eggs. In 2 buttered pie plates form "crusts" by pouring the spaghetti into the bottom of pie plates. Next spread cottage cheese evenly over each crust. To each pie layer 1 1/2 c. spaghetti sauce over cottage cheese. Sprinkle mozzarella cheese over the tops. Bake at 350 degrees for 35 minutes. Let cool for 5 minutes.
She also said if you put them in the freezer to put them in uncooked. Let them thaw and cook as normal. I have made these at least 3 times already and I do at meat to the sauce. They are great"
Or how about some of those sesame noodles like I took to Burlington
Cook some linguine (or whatever you have)
Chop some scallions.
Add some soy sauce, a clove or 2 of garlic, sesame oil, some olive oil & I add a bit of peanut butter too.
PW has a recipe for sesame noodles, but don't add the vinegar. I found it yucky in there.
