Posted - Jun 21 2011 : 11:20:06 AM Yikes! I missed alot of cucumbers in the garden and now they are HUGE AND YELLOW! Any ideas for how to use them now? I hate to throw them out...although the compost bin would sure like em.![](icons/icon_smile.gif)

Posted - Jun 22 2011 : 10:50:39 PM Easy Tzatziki 1 cup whole milk greek yogurt 1 english cuke (or whatever), shredded and drained (squeeze hard several times) 2 cloves garlic, finely minced/shredded 1 TBL. lemon juice 1 tsp. lemon zest 2 TBL. fresh dill, chopped salt and pepper (to taste) whisk together, refrigerate til used.
Good for greek gyros recipes, as a dip, salad dressing...

Posted - Jun 22 2011 : 10:47:37 PM I make a French Cuke salad- 1 large cuke- sliced thin 1/2 white wine vinegar 1/2 teas. salt 1 teas. sugar 3/3 teas. dried dill Toss all together and serve. I can eat whole batch on a hot day! Really refreshing! Tarragon would work too, instead of dill... This could probably be canned somehow...?

large cucumbers (enough for 2 gal.) 2 cups pickling/canning salt 10 quarts water 3 cups vinegar 1 oz. red food color 1 Tbs. alum 10 cups sugar 8 cinnamon sticks 6 oz.(or lg pkg) pkg of candy red hots
I am sure there are several different recipes for these pickles....This is the way I do mine. Peel cucumbers...Slice down the middle (long ways)...and take a teaspoon and scrape the seeds and any soft part of the cucumbers out. I slice or chop the cucumbers (whatever size or shape you want) I have an old ice cream bucket that I use to put the chopped pieces of cucumber in, sprinkling well with the canning/pickling salt! After this is all done....pour water over this until covered....Let stand over night. The next morning.... Drain and rinse well. Place these in a large pan (to dye them.) Add enough water to cover the cucumbers Now mix 1 cup of vinegar, with the red food color, and 1 Tbs of alum. Pour over the cucumbers.... Simmer for 2 hours, stirring every now and again.
Drain this after a couple hours and place in large container.
Making the Syrup.... Mix 2 cups vinegar, 2 cups water, 10 cups sugar, 8 cinnamon sticks, and the red hot candies. Bring to a good boil, melting all the candy red hots. Pour this over the cucumbers and let stand over night. (Sometimes I do, other times I just let stand sevral hours)
Drain and reheat the sryup. Place the cucumbers in sterile jars. Pour hot syrup over them. Don't forget to remove the cinnamon sticks! Water bath for 30 minutes or so.
This is quite the project, but they are good if you like sweet pickles and you don't want to waste the large cucumbers! You could do the same thing only use green food color for the next batch, and then you'd have both red pickles and green pickles to give for Christmas! This does make a large batch, so I only make them every couple of years. I use them in any recipe that calls for pickles...and on relish trays etc....They are always a hit! Good Luck! |

Posted - Jun 22 2011 : 08:08:36 AM I make what I call "Cinnamom Pickles" with those cucumbers that have grown too big and yellow....It is an old recipe that some have called "Christmas Pickles". Have you heard of that? I will see if I can find the recipe and post it here if you'd like .... I have made adjustments to the old recipe that make it easier! |

Posted - Jun 21 2011 : 2:25:46 PM When I get cucmbers like that I just peel, scrape out the seeds and then use in a salad or whatever. We love diced cucumber, tomato, and onions with Italian dressing.
