Posted - Jun 11 2011 : 3:06:03 PM I found this recipe that is called baked eggs. Well baking eggs was new to me; my Mother always cooked them on the stove top in some cooking way fashion. But, I never heard of baking them; so I tried it. And it is soooooo gooood I know you will love it. And, if you are like me ;you should have plenty of eggs right now. Here it is...
Baked Eggs 1 T. butter shredded cheese 5-7 eggs salt and pepper to taste 1/2 c. cream
Melt butter and pour in baking pan (9x13). Sprinkle cheese over butter. In a bowl mix up the eggs, salt, pepper, and cream. Then pour over the cheese. Then top with more cheese and bake in a 350* oven till the eggs are done.
Enjoy!

Posted - Jul 04 2011 : 06:11:59 AM I make my eggs this way all the time. I also bake my bacon. In one cast iron skillet I place the bacon and in 5 to 8 minutes I place another smaller cast iron skillet with my eggs. They come out at the same time and everything is tasty.
I love adding to the eggs, fresh chives, some goat cheese and even spring veggies - no limits and no watching which means I have just enough time to run to the barn and give the bottle goat kids their bottles.

1 slice ham per muffin cup 1 egg whisked w/ s&p per muffin cup sauteed onions & mushrooms grated cheese (cheddar) or crumbled feta herbs, finely chopped vegetable oil or butter
Brush the inside of the muffin cups with vegetable oil or rub them with butter. Lay 1 slice ham inside each cup. Place 1 T each sauteed onions & mushrooms in each muffin cup. Pour 1 whisked egg into each cup Sprinkle on chopped herbs and then cheese. Bake at 350 for 10-20 minutes, depending on your oven & if you're using metal or stoneware muffin pans.
Works really nicely for a brunch and for serving sizes. I've served this with English muffins or toast and it's well received. It's also gluten free for those with that dietary restraint - as long as you leave out the aforementioned bread products!

Posted - Jun 11 2011 : 9:36:58 PM mmm love sausage in it. And ham or turkey too! And you can add torn up day old bread too to it and make almost a savory bread pudding like dish. And I'm not positive, but seems to me some people make this in the crock pot too. I know for sure you can do this for one person in a coffee mug in the microwave too, but I never have. (I don't like to use the microwave). Yet even others put them in separate small ziplock baggies one for each person in the family, having them add the extras they want to it, and then boiling them in water. Again I haven't personally tried it but know others that do.

Posted - Jun 11 2011 : 8:33:32 PM I put browned breakfast sausage in mine and mushrooms. I need to make this again soon. You can make it the night before and put it in the fridge to bake in the morning. I do that for christmas morning. Thanks for the reminder! Connie

Posted - Jun 11 2011 : 8:26:33 PM I add veggies too. I also sometimes use bread crumbs to thicken it a bit. I never make a quiche with crust. Mostly because I dont make crust. Try cheese, green chile, mushroom and roasted red peppers and black olives. |

Posted - Jun 11 2011 : 8:14:33 PM lol commonly known as crustless quiche or some people also call them fritatas. You can do these countless ways, literally. They are also good with a little bisquick like mix, and zucchini and white style (like say mozzarella and the like) cheeses. Mmmmm! I've also added spinach to such and parm cheese. But, the zucchini one is always my favorite.
