I just boiled 18 hard boiled eggs to make deviled eggs for a pool party we're going to. Well, my eggs were too fresh and most of the white just went in the trash with the shells. Anyone here have a good trick for peeling hard boiled eggs (other than using older eggs)? I'm now making macaroni salad to use what's left of the eggs!

I too, thank you! Unfortunately, now owning German Shorthair Pointers I can no longer own chickens. They go straight to the chicken coop when that happens. We might try again when we move to the ranch.

Wow...who would have known? I wrote to Martha Stewart (yes, I'm serious) about how to boil and peel fresh eggs! I figured she'd know...but she never replied. Imagine that? So, after boiling and tossing so many eggs....I should have just come her first!

I can't wait to try the salt method!! Oh yeah, and the rolling method. :o) Thanks girls! You ROCK!

Thanks for all these good suggestions. My family loves deviled eggs and egg salad, so I'll be trying these "tricks" very soon.

After boiling them I cover them with cold water, then take them out and crack them all over and return them to the pan of water. I let them set a minute ir two to let the water seep in between the egg and shell membrane and then peel them. It works like a charm every time.

Well I do like Connie said, except not as much time just boil, dunk in ice water, and then tap lightly and roll between my hands to loosen the shell. It seperates and then is easy to peel right off. The spoon out method used in Europe is for soft not hard boiled eggs by my family, but purhasps some use it for hard boiled as well. Some help we are now that it is over huh Barbara ?!?

Oh well at least we all tried to help!!

Well, it wasn't even my question (and I haven't even thought about asking the farmgirls, ) but I will certainly try some of your tricks. I have had my battles with peeling hard boiled eggs, oh my! I am using fresh eggs all the time, since we have our own chickens. You should have seen me, struggling, swearing (silently), and crying, yes, crying! over my failures, time after time. I even bought a BOOK!! to see if I can learn better to master this dreadful obstacle...(Even though it didn't help me peel the hard boiled eggs, the book is pretty good. "The Farmstead Egg Cookbook" by Terry Golson with photographs by Ben Fink. A whole little cookbook with nothing but egg recipes. It is a good inspiration when we are suffocating under an egg-avalanche.)

What I do is after boiling them, plunge them into icewater for a few minutes..cooling them down fast really helps. I mean a bowl of water with actual ice in it..not just cold water..works pretty well. What works best is just using eggs that are a few days older...but I don't always have that option either!! I love to make deviled eggs...whenever I am way stocked up on eggs...like in spring especially....I make a big old batch and my kids eat them like crazy!!

since none of these tricks will work since your eggs are already boiled they are great referrance for future use. My cousion cuts off one end of the egg if you don't care what the egg looks like and just scupes it out with a spoon usually you can slide a spoon in right around the edges as the egg and spoon usually have about hte same curvature. you could try this with one see if it works for you. the shell will only be in two pieces when done. This is also the traditional european way of eating a boiled egg he learned it from his wife who is from germany

I bring the eggs to a boil, cover, remove from heat and let set for 17 minutes or so. Let them cool, so the shells will come off easily without pulling off whites. Works for me...

I agree with DaisyFarm, use salt and I use very fresh eggs. I cover the eggs with cold water, put in the salt, wait untill the water boils and let the water boil for only about three minutes. I turn the water off and let them stand in the hot water for about 15 minutes (if I have the time). Rinse and soak the eggs in cold water then place the wet eggs on a paper towel in a bowl and place in the fridge untill cool. Now comes the secret...Take an egg in your hand and crack it gently against the sink, crack, crak, crack on all four sides, then gently roll the egg between your hand and the bottom of the sink. All of this is under a small stream of running water. The cracking and rolling will seperate the egg from that membrane inside that causes the shell to rip the eggwhite apart. As you peel them under the stream of running water the shells will practically fall off in your hands. I made two dozen deviled eggs for a picnic yesterday and only had a problem with one egg and that was even usable. It sounds like alot of extra work but it becomes second nature and you won't pull out your hair the next time you are invited to a picnic.

Yep...salt and lots of it. I use 1/2 cup when I hardboil fresh eggs and it really does work.
