I just posted my favorite recipe for lemon curd to go with scones or muffins or whatever at the blog. It is really easy to make and just takes about 10 minutes to cook. Makes enough to put in small portions in the freezer - that is, if it stays around long enough!! I could just sit down and eat it with a spoon!! :-)

Amy, I'm thinking Christmas. I can package scones mix minus the butter and cream and include that with the canned curd. I am excited!! :-)

I just canned some on Saturday - I love lemon curd!! And it is probably the prettiest thing I can - it looks amazing, such a good gift. I made mine for wedding shower presents.

I love lemon curd! I was just gettin ready to make some. I was inspired by the muffins in the latest mjf magazine.

just like canning jam..just water bath it for 15 min (I do 1/2 pints) and bingo. It is awesome.

Margo, as I was making that last batch, I was wondering the same thing about how to make it with no sugar. I think I'll give it a try and just see what happens. I mean, if worse comes to worse, I can throw it out!!

Jenny, do you can yours? I did not realize it could be canned until recently. I figured with the eggs and sugar that it would not be safe. You learn something new everyday. If you do, how do you can yours? Thanks.

Isn't lemon curd wonderful? My second son, Casey, who is 31 now, just loves it. I make a batch now and then and send him off a couple jars. I know how to make him smile. My kids like to dip green apple slices in lemon curd for a snack.
