Posted - May 21 2011 : 7:37:16 PM Does anyone know? I have a recipe that makes ALOT and since there are only two of us (3 with Mom visiting) I thought I would see if I could freeze it. If not, I will probably just cut the recipe in half.

Posted - May 23 2011 : 2:31:29 PM Sharon- I can only imagine the size of the recipe you are working with! :) I just imagined everyone's look on their faces from the curious "Can this be done" to imagining rubbering potatoes and gritty mayo. I am going a bit stir crazy recovering from my tonsilectimy so a giggle was definitly a good thing yesterday! :)

You know Alee, I would have not thought of it except the volume that this particular recipes makes is ALOT which is fine for Potlucks but not for just the couple of us :)

Posted - May 22 2011 : 12:34:12 PM mayo doesn't freeze well at ALL. Don't freeze. Not only that but I am pretty sure it will mess up the texture of the hard boiled egg whites and the boiled potatoes, but I'm not sure on that. but, I know the mayo alone will completely ruin the texture after it's been frozen. It will taste/feel sandy/granular in your mouth instead of creamy/smooth. Oh and I'm quite sure celery doesn't freeze well either (seems to me it's limp after being frozen, but again not 100 percent sure but like 99 percent sure on the celery being limp after freezing). And I put celery in my potato salad. Not sure if every one does though.
I might give the hot german potato salad a looksy though with freezing, cause I think maybe every thing in it is freezable, but still I think the best bet is just cut it in half.
