Sometimes, I'm just too tired to even think about cooking for myself--working all day, the commute, picking up the girl from far flung places, running errands after work and still in my heels at 10:00. I eat a lot of garbage during the week, but I can't do it any more--my digestive system has been rebelling, and I ran across these awesome quick recipes from Jamie Oliver called "chicken four ways". Basically, 1 chicken breast, ingredients, a homemade foil packet and done. From start to finish, this took me 30 minutes total--and I can spare that to feel good about what I'm consuming. The asparagus was local, first of the season, cherry tomatoes, fresh rosemary from the garden, olive oil, kosher salt, cracked pepper and a drizzle of balsamic vinegar upon finish. You put it all in one bowl, mix it with your hands, then put into the foil and voila!!



I felt like an actual adult. Well, not too much of one to use a real napkin!

I wonder how these would work to make up and put in the freezer? After working all day at the office, I like to work in the yard or garden but then its so late fixing dinner and eating just before bed. Could fix them up with different spice and veggies and even customize them to mine and hubby's tastes. Put a couple in the fridge in the morning, then pop in the oven to cook while out in the yard. Easy clean up too.
