A friend of mine told me about the book The Bread Bible by Rose Levy Beranbaum and so I just ordered a copy off of Half.ebay.com. It is an expensive book but I got it really reasonable at $15. It looks huge and is a hardback. I can't wait to get it. My friend said that the recipes are awesome. I see extra pounds on my backside for my future!!! :-)

The Bread Bible is great, as is the Cake Bible (also by Rose), and the Cookie Bible, etc, etc. LOL!
