Posted - May 10 2011 : 1:23:23 PM It's almost time for asparagus season here and I was hoping to do some pickling. I tried looking online but the recipes I found seemed kind of doubtful. I was hoping one of my sister's here might have a good recipe that a beginner pickler might try? I've never pickled anything before and I like to buy pickled asparagus from the store but seriously, why pay $4-5 for a jar when I could do it myself! Also, is there a regular recipe, spicy or dilly (like dilly beans) recipes out there? Just wondering! Thanks for any tips!

Posted - May 31 2011 : 5:19:44 PM That sounds wonderful. If only I had planted that asparagus bed a couple years ago! I love it so much. I have pickled them dilly like that and also in a brine like I use for my bread and butter pickles as well..sweeter and tangier. Both really good. Hopefully I will get a chance to get some to pickle this year too. Hard to keep the kids out of it though...we all love asparagus any way!

Posted - May 31 2011 : 4:43:46 PM Thank you for posting this Laurie! I have a lovely bed of asparagus that has been growing and growing, but I can't pick it yet. It's only the second year. Will be picking next year though and I will have saved your recipe!! Yay.

Posted - May 31 2011 : 4:01:01 PM Since I can't find enough asparagus on the property we are renting I was going to a u-pick place about 35 minutes from my house. Then I found a neighbor girl selling it for $2 a pound and only a mile from my house! I am going to try out this recipe this weekend! Can't wait!

Posted - May 13 2011 : 07:22:45 AM Thanks for posting the recipe Laurie! As soon as the asparagus pops up I will be making it! Is it better to use the thinner spears or some of the larger ones? Or does it matter? Thanks so much!!!

Posted - May 11 2011 : 07:53:24 AM I just did up two pints yesterday!
try this. It makes 2 quarts. 1 qt water 1/2 cup vinegar 1/4 cup iodized salt pinch of alum heat above to boiling. 2 cloves garlic 2 stalks dill ( i used dill seed I had from last year) Enough asparagus for jars
Pack 1 clove garlic and one stalk dill into each jar. add asparagus. Pour boiling liquid over and let stand for 5 minutes. pour liquid back into pot and reheat to boiling. Pour into jars a second time, wipe lids and put on rings. As jars cool they will seal.
This is a pickle recipe. Since i used the dill seed i don't add the seeds until i add the liquid the second time. keeps it from floating everywhere.
