 Question about King Arthur Bread Flour

Ok, so I have a friend who has discovered King Arthur bread flour and says it is the best. However, she has wheat berries that she grinds herself and she really wants to use those. She wants it to be the consistency of the King Arthur's bread flour. I know that it is a mixture of barley and hard wheat flours. It seems to be different from other flours. Can you make that kind of bread flour with your own home ground flour? Any help would be appreciated.

Thanks, Lillian. I grind my own as well and so does my friend. But she tried some King Arthur flour and loved it. I've never used it, but it is an organic, whole wheat with barley flour and not the typical "store-bought" white flour. I told her to sift the fire out of her home ground whole wheat and to use pearled barley without the hull. Sifting takes out a lot of the germ which makes bread heavy and you can then sprinkle over the top of the bread dough before the second rising. You still get the germ without it making your bread heavy. She was just wondering if anyone had done anything differently.

You will not be able to grind your own white flour. As far as I know when you buy wheat berries to grind you are making whole wheat flour, because you are grinding up the whole berry. White flour has the outer shell removed before grinding and as far as I know you can't buy the berries like that. I could be wrong, but I have never seen any. I would love to be able to grind up my own white flour. So in the meantime I buy my white flour and grind everything else myself.
