I've begun my jelly makin for this year. And just in time I might add.

We are down to 1 jar of violet and 1 jar of rose jelly.

I have a gallon of water soakin my first batch of violets on the kitchen table right now! Yea!

I will also be makin dandilion this year. A first for us.

I am gonna take a shot at lemon as well since I had to have the zest for some of my easter bakin and now have 2 zestless lemons and 1 whole lemon sittin in my kitchen.

What jellies are you Ladies plannin for this year?

My list varies dependin on what I can locate for free.

I have chokecherry jelly and syrup, then I am planning on making some apple butter and some red hot apple butter. Also have strawberries to make jelly with along with making some triple berry jam! I love jelly making!

I made Hot Apple Butter one year. It was pretty good. You make up the apples for the butter, but don't add the sugar or spices. You add Red Hots until it's hot enough for you, then add in the sugar till it's sweetened to your liking. It turned out pretty good and makes a really nice icing for banana cake!

I got my rose petal jelly done. It turned out really pretty and it's a family favorite!

I just bought a canning magazine at our local Bi-Mart, it was in the canning supply section. It's by Ball called Blue Book Guide to Preserving, 100 anniversary edition.
Page 36 has a mint jelly recipe. the magazine is chock full of how-to's, hints and tons of recipes. Let me know if you can't find it anywhere and i will email that recipe to you.

The jam i thought would end up being syrup was actually more like a soft jelled jelly. I was pleasantly surprised. My husband made his sourdough pancakes and we had the cran/rasp jelly on them. It was delicious. I did read in a canning magazine that it can take up to two weeks for some jellies to "jell". Leave them in a cool area undisturbed. It said if not Jelled by two weeks they can be "re-done". Read instructions on the bottom of liquid pectin insert.

I wish I had been admitted to the forum a few days earlier...I could have really used some clarification. I just made my first strawberry jam after my three year old and I went strawberry picking. I ended up with one jar of jam...and 4 jars of syrup...plus a nice splatter of jam steam to the face! Being a farmgirl is always an adventure...and even misadventures are delicious!

why can't i be more conventional? people talk, people stare, so i try. but that can't be, because i can't see, my strange little world just go passing me by...so let people wonder...

A thought just occured to me--- you might have already thought of this, but it just dawned on me.
Instead of dumping out the water in the pot from doing a water bath canning, let it cool and use it to water your plants! Hahahaha i can't believe i've never thought of that before, i have several potted plants outside that dry out faster than those in the flower bed, so no more pouring the water down the drain, the plants will be thankful!

Question for you gals,

I was going to try a freezer jam recipe my mother-in-law brought me, but got to thinking...
What kind of containers do i use. I usually do regular jelly/jam and do the water bath, i am trying to rid my kitchen of plastic products, can i freeze in mason jars??

Just made my 1st "Candy Apple" jelly!! I have 11 full pints! They look great...wish I knew how to put a picture on here! I will have to get my daughter to help me! Anyway, the jelly looks and tastes great!

Do any of you farmgals sell your violet jelly? I am wanting to try some but apartment dweller that I am, cannot trust any violets around here to not be sprayed. So, can't make my own. I could barter for fabric or cold processed soap or toiletry things, or even just buy outright. Would rather get from a fellow farmgal than from just anyone off Etsy. I had a name of someone who was planning on making some a few months ago but I lost it, boo hoo!

You can pick them anytime of day.

You can use the whole head with violets, but not dandilions, it's petals only.

I noticed a TON of violets in the backyard (okay, we haven't mowed our backyard yet because I have been picking dandelions for jelly!) Then yesterday I noticed the violets! I remembered seeing posts about violet jelly and my question is this: when you pick the violet and go to prepare them to steep do you use the whole head or do you just pick the petals off? I've never made Dandelion or Violet jelly so this is my first time.
Mary, I am going to try out liquid pectin for the first time ever this week with dandelion jelly. I'm a little nervous trying out something doubly new (pectin AND dandelion jelly) especially since I've always had great luck with regular pectin.

One last question: When is the best time to pick the violets? Morning, afternoon? Is there a best time to pick or can you pick them anytime? Thanks!

I made my first batch of violet jelly over the weekend. I am thrilled! This will definitely be a new annual tradition. Only thing is, it didn't gel perfectly. I think I might try the powdered pectin next time. I have so so luck with the liquid kind.

Here is Elizabeth Iris's jelly. We had a great time together! Also, couldn't resist including a few of our Virginia Blue Bells. (The woods are full of them)(I wonder if they would make jelly...hmmm)

Just finished 10 4oz jars violet and 11 4oz jars dandeline jelly with 12 yr. old gdaughter doing most of the work. Yay, Elizabeth! Will post a pic tomorrow.
