I am harvesting my baby kale, spinach and red mustard. I was wondering what's the best way to put it up. I also picked a bunch of beautiful dandelion leaves I found down around my pear trees. I am just parboiling them right now. And I will strain them and cool them down and put them in freezer bags. But I wonder if steaming would be better? Any ideas? Thanks.

I thought I would use them in quiches and smoothies. Any other good ideas for them would be great. I have grown spinach of course but this is the first time for the red mustard and little kale. They are both an heirloom variety. And very tasty.

Thanks, Maggie. I am still hunting nettles here. I want some bad. I was just looking at my bedd where I have the greens and it looks like something or someone, laid down in it. It needs watered. I only did half the bed the other day. DIdn't take long at all to do.

i used them in quiche and smoothies, like you said, also in soups, casseroles and scrambled eggs :)

last year I froze a bunch of nettles, and it worked beautifully. I just blanched them, quickly cooled them, packed them into jars and froze them.
